From a production point of view Aceto Balsamico di Modena “Vecchio” differs from the other balsamic vinegars mainly for the absence of caramel that is normally added in order to improve the appearance of lower quality products. The softness and balance, very marked characteristics in this product, arise out of skilled mixing of wine vinegar with a classic cooked must from our local grapes. The aroma and flavour develop with extended ageing in casks that are never completely emptied so as not to alter the equilibrium achieved and to keep the special aroma and flavour of the aceto balsamico consistent.
