FARMER'S BREAKFAST

Take some Italian bacon (or some other according to local custom, the Tuscan “streaky bacon” is very good. Cut the bacon into not too thin slices and also slice a white onion. Brown in a pan adding a knob of butter. When browned add two fresh eggs without breaking them. When properly cooked take the pan off the fire and arrange on a dish. Dress with a poor spoonful of "Aceto Balsamico di Modena Umberto". Add the dressing when the food is still very warm!
