SOUR AND SWEET SAUCE WITH HERBS AND GARLIC

Chop a good parsley bunch and a garlic clove. Put in a pan, add two spoonfuls of olive oil and a small knob of butter which helps keeping a lower cooking temperature. Let simmer without browning for a short time, then cook on a hot fire and add a spoonful of bread crumbs and let brown for a while. Now pour a spoonful of Aceto Balsamico di Modena “Giovane”, add the salt and a teaspoonful of sugar. Take off the fire after a while and, when cold, add some more oil, if necessary. Serve cool on boiled meat and toasted bread.
