The Traditional Balsamic Vinegar “ITALO”, is stored in oak and chestnut- wood barrels following the tradition of the Pedroni Family. The fragrance of this vinegar is given mainly by the grapes and by the two kinds of wood most widely used for the ageing of the vinegar. The product thus obtained presents all the typical features of the Traditional Balsamic Vinegar and matches perfectly with a risotto or with vegetables, with omelettes or roast meats, and can well accompany icecream and strawberries. The youngest among the Pedronis’ Traditional Balsamic Vinegars bears the name of my father “ITALO”, as it is the result of both the recipe handed over to him by his ancestors and of his direct experience in the management of the batteries used to produce this vinegar. This vinegar represents the ideal choice for those who start approaching the world of the fragrances and tastes of the Aceto Balsamico Tradizionale di Modena.
